Someone, a while back, asked for an aubergine (eggplant) recipe. This is the Greek dish, moussaka. The meat layer could be omitted and maybe replaced with a layer of baked courgette (zucchini) strips for a vegetarian version. Just cut thin strips length-wise and coat with olive oil, then bake like the aubergine, but probably not as long…
